History

Come il vento is the spring that dances, the unknown woman who covers your eyes with her hands and you have to guess who is it. Her voice is gentle, her face is a cliff rising sheer above the sea. She has elderflowers in her hair and she likes counting the bounces of stones on water.

Method

Winemaking

Cold maceration on skins. Fermentation at a temperature of 16-18°C with cultured yeasts. Wine completes its maturation in stainless steel tanks. Blending, light clarification and final filtration after refining.

Aroma

The five senses

Bright and fresh straw-yellow wine with greenish tints. Well-structured on the palate, with the ripe fruits intertwining with mineral notes. Amazing freshness. Typical, and concentrated fragrance, with persistent finish and elderberry and beeswax notes.
