History

History

The cork is rigorously closed by hand with twine: it is an ancient art useful for balancing the inner pressure of wine and thus for favouring its second fermentation. The result is a second life for wine, which gets a fresh and perfect sparkle in every occasion.

Method

Winemaking

After a light pressing and maceration at a temperature of 23°C for 6 days, wine exhausts slowly its fermentation at 18°C in order to keep its fruity aromas unchanged. Then the second fermentation in a pressurized tank is started to give this pleasant and rustic wine a delicate petillant.

The five senses

Bright ruby-red colour of various intensities: Weighty, fresh, young and persistent taste. Wide and fragrant aroma with wild berries hints.
